Easy Eggplant Wraps

Jonathan and Bridget LOVE these.

ingredients:

eggplant (1 medium to large)
tomatoes, chopped
lettuce, chopped
hummus
feta cheese, crumbled
wraps of your choice

Slice the eggplant into 1/2-inch slices and brush liberally with olive oil. Season with a little salt. Place on foil and grill for 7-8 minutes per side on medium heat. Make your wrap with the grilled eggplant, tomatoes, lettuce, hummus and feta cheese.
