I started making this because I was getting fresh green beans from the farm. Last Saturday was the last time we're getting them. Oh well. The amounts are all just whatever seems appropriate.
Ingredients:
fresh green beans, lightly steamed, cooled, and cut in half
red onion, sliced thin
cherry/grape tomatoes, halved
chick peas
your favorite vinegar-based dressing
Mix all the ingredients together and let marinate overnight in the fridge in an air-tight container. Lasts a week in the fridge. Add feta cheese if it goes with your dressing.
I use usually use raspberry vinaigarette but the one I've got marinating now is Asian Sesame. I hated how all the recipes I was reading for green bean salad said, "Even the lady at work who hates green beans loved this!" - when the recipe has a cup of sugar in it. It's crazy!
