I looked up leek recipes when I ended up with four in my farm vegetable bag. I wanted something that didn't involve a pint of heavy cream. I found a recipe at allrecipes.com for a Tomato and Leek tart. I didn't want to make a pie crust and the store bought ones contain lard, which is non-vegetarian. So this is my adaptation.
Ingredients
1 leek, sliced, just the white and light green parts
1 tomato, sliced
2 slices of provolone cheese
Parmesan cheese
salt, pepper, and garlic powder to taste
1 flat Lebanese style pita or ready-made pizza crust
Layer ingredients in this order onto crust: provolone cheese, tomato, leeks, spices, Parmeson
Bake at 400 degrees (pre-heating not necessary) 12 - 15 minutes.
