Here is how I make a side dish out of butternut squash:
Preheat oven to 350 degrees. Peel the squash with a veggie peeler. Cut it into approximately 1 to 1 1/2 in. cubes, discarding seeds and pulp in the center. Put the pieces into a greased baking dish and bake for 20 minutes. Check a piece to see if it is tender all the way through. If not, bake for an additional 10 minutes and check again.
I then puree the pieces in my food processor, adding some brown sugar and butter. It is also delicious without anything added.
My friend Wendy leaves the pieces intact, but sprinkles salt and pepper on them and sometimes a little olive oil.

I have an awesome butternut squash soup recipe that starts like this.
I just kind of make it on the fly, so I was going to try to keep track of the amounts for what I put in next time before posting it.
