Healthier Nachos

I love nachos and I love salsa con queso.

I had two acorn squash but for some reason, I didn't like how it tasted with butter. It was too much for me. So I took the baked squash and mashed it with a fork and mixed in some queso. Depending on how much queso you add, you won't even taste the squash, you've stretch your queso, and you're eating a vegetable.

I've taken to buying corn tortillas and cutting them up and baking them to make my own chips. When I just feel like a tiny snack or I don't want to fire up the whole over, I throw two tortillas in the toaster. Eat them with this squash and it's mighty tasty.
