I just made these last night and they came out great! So yummy! There are a lot of very similar black bean brownie recipes on the internet. This is the one I made. So for Rebecca who buys black beans 25 lbs at a time and Mary who is looking for healthy dessert recipes, here you go!
Ingredients:
2 C cooked black beans or 1 can black beans, drained
3 eggs
1/3 C melted butter or melted coconut oil
1/4 C cocoa powder
1/8 t salt
2 t vanilla
1/2 C honey
1 t baking powder (optional) for a slightly more cakey brownie.
1/2 C chocolate chips or chocolate chunks (optional)
1/3 C chopped nuts (optional)
Preheat oven to 350 degrees F. Grease an 8x8 baking dish. Place all but the final two ingredients in a blender and blend until smooth. Fold in or sprinkle on optional nuts and/or chocolate chips. Pour batter into prepared baking dish. Bake for 30 min; until brownies start to pull away from the edge of the pan.
From what I read, the brownies taste better if they have been refrigerated overnight. I left mine out on the counter overnight b/c they were still hot when I went to bed. I had one this afternoon and it was delicious!

Thank you! I am so excited to try this recipe. I have a black bean brownie recipe that is super complicated so I have never made it. This one I can do!
I really want to know what others think about it! Not that it's "my" recipe, but Michael emphatically disliked these brownies. I had his sister try one tonight and she didn't think they were terrible, but she didn't want to eat a whole one. I actually think they are *good* and enjoy eating them! Have my tastebuds changed? Or do they just have a more rigid paradigm of what a brownie should be?
I'm going to make these this week (need to buy more cocoa powder first) and I'll post on how it goes.
Just made these today, and I really them. I used the baking powder. They're really rich and fudge-like. Ben and Jonathan liked them, too. I'm sure Bridget will, too, but she needs to eat dinner first...
Sarah, Ben loves these brownies! He said they are now his favorite brownie. The only thing I added was about a teaspoon of instant decaf coffee.

So I just made this recipe but I looked up how to substitute honey in recipes because I had none. I replaced the honey with 10 tbsp of sugar and two tablespoons of prepared coffee. The conversion said 2tbsl of liquid and I had coffee handy and Alton Brown always says why add water when you can add something with flavor and every cooking show adds a smidge of coffee to chocolate desserts to bring out the flavor. Also, I only had two large eggs, so that was it.
Anyhoo, they came out great. I love them.
