This is a wonderfully flavorful meatloaf. I found this recipe in Real Simple magazine a while back.
1 1/2 lbs. ground turkey
1 small onion, chopped
1/2 cup bread crumbs
1 egg, beaten
1 cup grated Parmesan
2 tbsp. Dijon mustard
2 tbsp. dried parsley
6 -7 oz. roasted red peppers, cut into 1/2 in. pieces (I use half of a 12 oz. jar)
1/2 tsp. ground black pepper
Preheat oven to 400 degrees. Combine turkey, bread crumbs, egg, Parmesan, mustard, parsley, red peppers, and ground black pepper in a large bowl. Shape meat into an 8-inch loaf and place in a baking dish. Bake for 45 minutes. Let it rest 15 minutes before slicing.
