Sarah's bad apples post on her blog reminded me that I needed to use up some of our bad apples in Jonathan's favorite applesauce recipe. It's from a book we bought him this fall that is all about apple picking and it has many activities you can do with apples.
6 apples, peeled and diced
1/4 cup apple cider or apple juice
2 tbsp. maple syrup
cinnamon to taste
Put the apples in a pot with the cider/juice and maple syrup. Bring it to a boil, then shake in some cinnamon. Simmer for about 20 minutes or so. Add more cinnamon if you want, and let it cool.
